Stuffed Sweet Potatoes

  Stuffed Sweet Potatoes Recipe by  @plantbased.traveler 👉🏼​For 2 servings you need: 2 large sweet potatoes, scrubbed ​👉🏼Chickpeas: 2 cups chickpeas, cooked and rinsed 1 tbsp olive oil 1/2 tsp each of paprika, smoked paprika, oregano, salt, garlic and onion powder 👉🏼Mediterranean Salad: 1 cup cooked pearl couscous (or quinoa for a gluten-free version) 1 small cucumber 10-12 grape or cherry tomatoes 1 bell pepper A handful of olives (I used Kalamata and green olives) 2 cups of arugula (or other greens) 👉🏼Dressing:
 ​1 cup cashews, soaked and rinsed 3/4 cup of water 1 large lemon 2 garlic cloves Salt to taste 1 tbsp fresh dill 👉🏼​Steps ​Preheat oven to 425 F/ 220 C. Toss chickpeas with olive oil and seasoning, and place them along with the sweet potatoes on a large, lined baking tray. Quick Pan Fried Noodles

  INGREDIENTS 300   g   fresh noodles   see notes below 2   tbsp   neutral oil 2   cloves   garlic  minced 2   green onions   cut lengthwise in 2" pieces 1   cup   bean sprouts   or other vegetables 1   tsp   sesame oil   to finish Sauce 2   tbsp   soy sauce 1/2   tbsp   dark soy sauce 1/2  tbsp   sugar 1/8   tsp   white pepper   or black pepper 1   tbsp   water INSTRUCTIONS Combine the sauce ingredients in a bowl and prepare the noodles as per package instructions. Rinse the noodles under cold water, drain, and set aside. Heat oil in a wok or a large pan over medium heat. Add garlic and white parts of green onion and cook until fragrant. Add noodles and mix to combine. Pour in the sauce and cook for about 2-3 minutes until the noodles are caramelized. Add bean sprouts, reserved green onion, and sesame oil to finish. Enjoy!

Garlic Parmesan Gnocchi

  INGREDIENTS (double) - 2 sticks Unsalted Butter  (1C or 200 g) - 3 Garlic cloves (minced) - Pinch of Red chilli flakes - 1 tsp Salt or to taste - Parmesan cheese (grated) METHOD - Sauté garlic in melted butter. Then add the spices and half boiled gnocchi. - Give it a good mix on high flame, until the gnocchi is golden. Sprinkle loads of parmesan and enjoy!

Add onion and cook until translucent. ⁣ ⁣⁣ ⁣Toss in broccoli florets and cook for a few minutes, until broccoli is bright green and nearly tender. Season. ⁣ ⁣⁣ ⁣Add coconut milk and veggie stock. Simmer until broccoli is tender. Transfer to a high speed blender with all other remaining ingredients.
