Pork Kecap Manis

 Marinate 500g boneless pork belly with rind on which has been cut into 1.5cm slices in the following mixture: 1/3 cup of kecap manis, 

6 cloves of garlic - chopped, 

1 tbs Chinese rice wine, 

1 tsp brown sugar, 

1 tbs light soy sauce, 

2 cinnamon quills, 

6 star anise, 

6 cloves. 

1 tsp garlic

Leave for at least 2 hours. Remove pork from the marinade and in a large pan fry in 2 tsp of vegetable oil till golden on each side (approx 2 minutes per side). 

Add the marinade along with 1 cup of stock and cover and gently simmer for 90 minutes.
