Garlic Butter Chicken Bites with Lemon Asparagus:

 INGREDIENTS

3 chicken breasts, boneless and skinless, cut into bite-sized pieces - (i used 6 thighs)
2 bunches of asparagus, cleaned and trimmed
1/2 cup of butter, divided (1/4 cup for sautéing the chicken and 1/4 cup for the sauce)
1 teaspoon of olive oil
2 teaspoons of minced garlic, divided (1 teaspoon for the chicken pieces and 1 teaspoon for the asparagus and sauce)
1 teaspoon of Italian seasoning or Herbes de Provence
1/2 cup (125ml) of low-sodium chicken broth
Juice of 1/2 a lemon
1 tablespoon of minced parsley
Optional crushed red chili pepper flakes
Lemon slices for garnish

### Ingredients:
**For the Chicken:**
- 3 boneless, skinless chicken breasts, cut into bite-sized chunks
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon garlic powder
- 2 tablespoons olive oil
- 3 tablespoons unsalted butter
- 4 garlic cloves, minced
- 1 tablespoon fresh parsley, chopped
- Juice of 1 lemon
**For the Asparagus:**
- 1 bunch of asparagus, trimmed
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1 teaspoon black pepper
- Juice of 1 lemon
### Instructions:
1. **Prepare the Chicken:**
- Season the chicken chunks with salt, pepper, and garlic powder.
- Heat olive oil in a large skillet over medium-high heat.
- Add the chicken chunks and cook for about 6-8 minutes, stirring occasionally, until the chicken is golden and cooked through. Remove the chicken from the skillet and set aside.
2. **Make the Garlic Butter Sauce:**
- In the same skillet, melt the butter over medium heat.
- Add the minced garlic and cook until fragrant, about 1 minute.
- Return the chicken to the skillet and toss to coat in the garlic butter.
- Add the lemon juice and chopped parsley, tossing again to combine. Remove the skillet from heat.
3. **Prepare the Asparagus:**
- In a separate skillet, heat the olive oil over medium-high heat.
- Add the asparagus and season with salt and pepper.
- Cook the asparagus for about 4-5 minutes, stirring occasionally, until tender but still crisp.
- Squeeze lemon juice over the asparagus and toss to coat.
4. **Serve:**
- Plate the garlic butter chicken bites alongside the lemon asparagus.
- Garnish with additional parsley and lemon slices if desired.
