Minoli - Jackfruit Tacos

 ngredients

280g drained tinned jackfruit (save the juice)
4 cloves chopped garlic
1/2 tsp Smoked paprika
1/4 tsp Onion powder
1/2 tsp Coriander powder
1/2 tsp Cumin powder
1 tbsp Coconut oil
Salt to taste
1 tsp Chilli powder
1/2 Red onion chopped
Rosella condensed tomato soup pack
Tortillas
Red cabbage sliced thinly
Capsicum diced
Tomatoes diced
Red long chilli sliced thinly
Lime and salt to taste

Method
Mix all the marinade ingredients except the onions and Rosella condensed tomato soup.
Heat a little coconut oil on the pan. Add onions and sauté for a few minutes, then add the jackfruit and fry until gets a nice brown colour. Add a bit more oil if you need to. Add half a pack of the Rosella condensed tomato soup, combine and cover. Lower the heat to med/low. Once it develops a dark crust, take off the heat.

Serve a tablespoon in a warm tortilla/taco and top with your favourite fresh ingredients. I used cabbage tomatoes capsicum and chilli with a wedge of fresh lime - but use whatever you like! Season with salt.
